Introduction

High protein/filling yummy pudding. Great with fruit for breakfast. High protein/filling yummy pudding. Great with fruit for breakfast.

Ingredients

    1 cup amaranth grain
    3 cups skim milk
    1 cup shredded unsweetened coconut
    1/3 cup splenda
    1 tsp vanilla extract.

Directions

Heat milk in a large saucepan, slowly, until scalded.

Add remaining ingredients to milk, and then pour into an oiled casserole dish.

Bake at 350 degrees for 60 minutes, until amaranth is tender.

Serve hot or cold.
