Introduction

Ingredients

    1.5 cups dry black beans, rinsed and soaked overnight (yields about 3 cups cooked beans)
    1 smoked turkey wing, whole
    1 15 oz can chopped tomatoes with juice
    3 cups chicken stock, defatted
    1/2 cup onion, raw, chopped
    3 garlic cloves, sliced or chopped
    1 cup water
    ------
    salt
    pepper

Directions

Rinse and soak beans overnight. Place in crock pot, add all other ingredients except salt and pepper. Nestle turkey wing down into the beans. Turn crock pot on high, cover and simmer till done. Time will vary according to your crock pot.
Add salt and pepper at the end to adjust seasoning.

Serving Size: Makes about 12, 1-cup servings
