Ingredients



    2 Spinach chopped (or 1 package frozen spinach)
    1 Red Bell Pepper
    1 Green Bell Pepper
    1 lb Turkey, Ground turkey, (or sausage)
    1 cup fresh Mushrooms
    1 regular carton Egg Beaters Original, 1 regular carton (I sometimes mix half and half with Egg Beaters Egg whites)
    1/2 cup Kraft 2% Shredded Cheddar Cheese,

Directions

1. cut all vegetables to bite sized (I slice Mushrooms, and cut peppers into chunks, etc. Basically, you can add whatever veggies you want)
2. Brown ground turkey (I use hot and spicy turkey sausage)
3. Spray 9x9 glass baking dish with cooking spray
4. Combine all ingredients in baking dish and mix to distribute
5. Pour Egg Beaters over the other ingredients
6. Sprinkle with salt and pepper
7. Bake at 375 until egg is cooked through
8. Allow to cool for 5 minutes before serving

Serving Size: Makes 9 servings in 9 inch baking dish
