Ingredients

    4 large eggs
    1 1/3 cup milk
    1/2 cup flour
    1/2 tsp baking powder
    dash paprika
    2 cups asparagus
    1 cup shredded swiss cheese

Directions

Preheat over to 400 degrees.

Grease a pie plate or pie tin and set aside.

Chop asparagus into 1 inch pieces and steam for about 4 minutes or until just tender enough to puncture with a fork. Spread cooked aspargus evenly in on greased pie plate, cover with swiss cheese.

In a large bowl, whisk eggs, flour, baking powder and paprika. Add milk, and continue whisking until blended. Pour the egg mixture over the aparagus and cheese.

Bake for 25 minutes or until golder brown.

Serving Size: Make 8 servings
