Number of Servings: 8

Ingredients

    3 cucumbers, 1.5 peeled, 1.5 not peeled, chopped or sliced
    red and yellow bell pepper, 3/4 cup diced
    onion, 1/4 cup fine chopped
    celery with leaves, 3 small stalks/1/2 cup fine chopped
    tomato, 1/3 cup or so diced

    1/2c light raspberry vinaigrette dressing
    2 tbsp balsamic vinaigrette
    5 tsp deli/brown mustard
    seasonings as you like them

Tips

If preparing ahead of time, layer veggies in a bowl, cucumbers on bottom, tomato on top. Add dressing and toss when ready to serve. (Keeps it from getting soggy!)


Directions

chop, slice, dice all the veggies to whatever consistency you like! mix dressings and spices and combine with veggies in a bowl!
