    • Lots of vegetables –chopped – sauté in a small amount of vetable broth
    o Onion
    o Garlic
    o Celery
    o Carrots
    o Broccoli slaw
    o Zucchini
    o Yellow squash
    o Peppers – red/yellow/(green)/orange
    o Use your imagination
    • Add Beans – canned/rinsed or soak your own-– add seasoning: pepper/Mrs Dash Southwest Chipotle/ Fiesta Lime
    o Kidney beans
    o Black beans
    o Garbanzo beans
    o Pinto beans
    o Cannellini
    • Add Tomatoes
    o Crushed tomatoes
    o Diced tomatoes
    o Fired roasted tomatoes
    • Simmer – the longer, the better
    • Season to taste


You can add kale or spiniach also! Store in individual containers and freeze for lunches on the go!


Saute onions, garlic and celery for 5 miutes in vegtable broth. Add rest of ingredients and simmer for 1 hour.
You can cook in slow cooker for up to 4 hours.
