Ingredients

    4 cups vegetable broth
    8 oz skinless smoked turkey sausage, sliced
    1/2 cup red onion, chopped
    1 cup red, yellow, or orange bell peppers, chopped
    2 cup potato, cut into cubes (about 2 small potatoes)
    4 cup kale, packed
    2 cup pinto beans, rinsed & drained (2 16 oz cans)
    seasonings to taste (black pepper, red pepper flakes, garlic, oregano)

Tips

Use low sodium vegetable broth and always rinse and drain your beans to keep sodium content low.


Directions

Over medium heat, add sausage and onions to a large nonstick pot. Cook until sausage is slightly browned, 1-2 minutes. Add vegetable broth, peppers, potato, and seasonings. Bring to a boil. Reduce heat and simmer, about 5 minutes. Add kale and beans and simmer about 5 minutes more, or until potatoes and kale are tender.
