Ingredients

    3/4 cup dry quinoa
    1/2 head of broccoli (or 1 stalk large from a bunch)
    1.5 tbsp butter
    1.5 tbsp whole wheat pastry flour
    1 small shallot, diced
    1 cup skim milk
    one or two shakes garlic powder
    one or two shakes cayenne pepper
    salt and black pepper to taste
    1/4 cup parmesan cheese

Directions

Preheat oven to 400. Cook quinoa according to package. When almost done, throw in broccoli (cut into florets) and put the lid back on so it can steam a little. Melt butter in small saucepan, add shallots, flour, and spices, sautee a couple minutes, then add in milk. Stir until becomes bubbly and thick. Remove from heat, add parmesan cheese, stir. Pour quinoa and broccoli into 8x8 casserole dish, pour sauce over it, mix, and pop in the oven for 20-25 min.
