Ingredients

    1 medium bell pepper (yellow, orange or red), chopped
    1/2 large cucumber (with peel), seeded and chopped
    1 Green Onion, minced
    1/2 medium Jalapeno Pepper, minced
    1 tomato, chopped
    1 bunch Basil, rough chopped
    1 bunch Fresh Mint, rough chopped
    2 Tbsp Extra Virgin Olive Oil
    3 Tbsp Rice Vinegar
    Salt to taste, preferably Maldon Sea Salt
    Black pepper to taste, preferably freshly ground

Directions

Combine all ingredients and adjust salt and pepper to taste.
