Introduction

I created this recipe from inspiration I borrowed from Chef Meg on her Slimmer Sausage and Pepper Grill. This is just an easier recipe to create one-skillet meal. Ingredients

    one cup of sliced onions
    two cups of sliced mixed sweet peppers (use frozen peppers)
    one 12 oz. frozen bag of hash browns
    five garlic cloves, chopped (use 2 1/2 tsp. of minced garlic)
    one Tbsp. of balsamic vinegar
    1/2 tsp. of oregano
    one tsp of Italian seasoning
    ten oz. of smoked sausage, sliced diagonally
    one dash of black pepper

Directions

liberally spray large skillet with non-stick spray. At medium-high flame add all the ingredients by first layering the potatoes first, then the onions, garlic, and peppers, and top with the sliced sausage. Season all. place lid on skillet and lower flame. cook for 20 minutes and stir. Then cook another 20 minutes.
