Introduction

Ingredients

2C finely chopped Cucumber (seeded)
1/2C finely chopped Tomato (seeded)
1/4C finely chopped red onion
2Tbls finely chopped parsley
1 finely chopped Jalapeno (seeded)
4 1/2tsp finely chopped Cilantro
1 clove of garlic minced
Sauce
1/4C Plain Greek Yogurt
1 1/2tsp Lemon juice
1 1/3tsp lime juice
1/4tsp ground cumin
1/2tsp sea salt (or less - to taste)
Directions
Finely chop all ingredients together in bowl (be sure to use a glass or ceramic bowl or plastic, not a metal bowl as there is citrus in it)
Mix together all Sauce ingredients and pour over chopped veggies. Gently stir together. Let sit over night to allow flavors to blend together. Serve with baked tortilla chips, on chicken or fish, as a salad, with chopped veggies or any other way you wish.
