    1 large yellow onion
    16 oz sliced or diced mushrooms
    4 cloves minced garlic
    4 TBL whole wheat flour
    3 TB balsamic vinegar
    1/2 c milk substitute (I used 1 cup)
    Thyme to taste
    16 oz cooked whole wheat fettuccini noodles

    I also added about 1/2 cup mushroom broth and 1/4 cup nutritional yeast for more depth & body.


The kids and hubby ALL snarfed two helpings of this down. We are still surprised at how easy and tasty the Engine 2 Diet things are. WOW!


Cook onion in nonstick skillet till translucent, add musrooms and garlic. Cook until mushrooms release their liquid and sprinkle flour over. Stir Constantly until flour dissolves, then add vinegar and milk and stir. I added the nutritional yeast and more seasoning and then served.

Serving Size: Makes 3-4 servings, with pasta leftover
