Ingredients

Egg, fresh, whole, raw, 5 large
Atlantic Salmon (fish) (.5 filet option = 198g), 3 oz
Asparagus, fresh, 15 spear, small (5" long or less)
Butter, unsalted, 1 pat (1" sq, 1/3" high)
Feta Cheese, 2 oz
Milk, 1%, .5 cup
Salt to taste
Pepper to taste
Ground red chile peppers to taste
pinch of dried basil
Tips
Allow the frittata to sit for a few minutes before cutting.
Directions
Chop asparagus and salmon. Saute in butter until tender.
Meanwhile, puree eggs and milk in blender.
Pour egg mixture over asparagus and salmon.
Cook, pulling in with a spatula to allow the liquid to run and cook. Add S&P, red chile, basil.
When nearly done, place skillet under the broiler and brown on top.
Sprinkle feta on top and give it another couple of minutes under the broiler.
Serving Size: make 6 wedges in a small cast-iron skillet
