Ingredients

    28 oz can (BPA-free) diced tomatoes, drained
    ½ large onion, cut in wedges
    1 teaspoon chili powder
    ½ teaspoon salt
    ½ teaspoon pepper
    ¾ lb flank steak, trimmed
    ½ cup quinoa
    1 medium ripe mango, peeled and diced
    2 tablespoons chopped fresh cilantro

Directions

Combine tomatoes, onion, chili powder, salt and pepper in a 3- or 4-quart slow cooker. Add steak. Cover and cook on Low 6 hours or until steak is tender. Cook quinoa according to package directions. Shred steak; serve steak and tomato mixture over quinoa. Top with mango and cilantro.
