This comfort food is somewhere between Sicilian chickpea pasta and Egyptian koshary. Ingredients

    Olive oil, 1 tbsp
    Garlic, 3 clove (finely chopped)
    Chickpeas (garbanzo beans), canned and drained, 1 cup
    Italian herbs (1-2 tbsp) [substitute: 1 tsp cinnamon and chili]
    Apple cider vinegar, 1tbsp
    Canned Tomatoes, 1.5 cup
    Butter, unsalted, 0.25 cup
    Noodles - PC Yolkless per 1&1/2 cup or 56g, 224 gram(s)
    French Fried Onions, 6 tbsp
    Salt

Directions

Over medium heat in a large frying pan heat the olive oil. Add garlic, cook for 1-2 minutes (until blond).
Add herbs (or spices), a pinch of salt, and chickpeas.
Cook until chickpeas are tender. Add vinegar and cook to reduce.
Add canned tomatoes, reduce heat and simmer for 20 minutes or so. In last minute or two add the butter and stir it in until it is melted. Salt to taste.
Cook pasta according to directions (use the pasta of your choice, I like the yolkless egg noodles).
Drain pasta and add to tomato mixture, combine.
Serve topped with french fried onions.
