Ingredients

    Onions, roughly chopped, x 2
    Cherry Tomatoes, 1 cup
    Red Pepper, chopped, 1 cup,
    Garlic, chopped, 3 cloves
    Parmesan Cheese, shredded, 2 tbsp
    Balsamic Vinegar, 2 tbsp
    Mushrooms, 1 cup, whole
    Olive Oil, 1 tsp
    Eggplant, cubed, 2 cups

Tips

Add a cup of cooked wild rice and a quarter cup of mixed fresh herbs (parsley, chives, coriander) for a delicious rice salad.


Directions

Mix all ingredients together except cheese and lay evenly in a roasting dish.

Bake for 30-35 minutes in a moderate oven.

Remove from oven, sprinkle parmesan on top, return to oven for another 5 minutes.


Serving Size: Makes 2 main meal servings or 4 side servings
