Ingredients

1 Tbs EVOO
1 Shallot
1 leek
20 oz mushrooms (mixed any type- I like to use crimini, white and portobellas)
reserve 4 oz mushroom
1 clove garlic
1 tsp thyme
1/2 tsp sage
salt
6 cups vege broth
1/4 cup rice
Directions
Saute chopped leeks and shallot - until tender
add 15 oz mushrooms - saute until mushrooms sweat and release juices
add minced garlic and herbs
add rice and broth - bring to boil, then lower heat, cover and simmer until rice is done about 20 minutes.
When rice is done, blend soup In batches - return to pot..add remaining 5 oz of mushrooms and cook until those are done...serve
