Introduction

A odd but somehow really good combination - tastes like fried rice, Mexican rice and scrambled eggs creating a wonderful and healthy meal. High in protein, fiber, vitamins and minerals. Ingredients

    1 cup dry quinoa (cooked according to directions) OR 3 cups cooked quinoa
    Cooking spray or olive oil
    1 - 2 cups chopped veggies of choice (can use peppers, broccoli, onions, corn, tomatoes, mushrooms, etc)
    6 eggs
    1 cup shredded cheddar cheese
    1/2 cup sasla
    1 tsp cumin
    1 tsp garlic powder
    salt and pepper to taste

Tips

I used red quinoa for the picture but have done it with regular as well. Feel free to add black beans or ground beef or cilantro.


Directions

-Cook quinoa per directions.
-Meanwhile, spray a frying pan and turn the heat to medium.
-Add veggies of choice and saute for a few minutes.
- Whisk eggs with 1 Tbsp of water in a bowl.
-Remove veggies from pan and save for later.
Spray pan again and add eggs. Stir until starting to set then add back veggies. Stir in salsa, cheddar, cumin, garlic, salt and pepper.
Turn off heat and stir in cooked quinoa.
Serve!
