Introduction

Number of Servings: 6

Ingredients

    6 oz Pork chops, diced small
    5 cups diced potatoes
    1/2 cup diced onions
    3 cups beef broth
    1 cup diced green chili (Fresh or Hatch canned)
    1 cup shredded carrots
    1 Tb corn starch
    3 Tb water
    1 Tb Olive oil

Tips

This dish is great served with a couple of heated corn tortillas and a little cheese on top!


Directions

Cook pork in olive oil on med-high heat, until brown. Add potatoes and continue cooking until potatoes are brown and tender, about 5-7 minutes. Reduce heat and cover. In a sauce pan, cook the onions, carrots, and green chili with 1/4 cup of the broth, until Carrots and onions are tender. Add the rest of the broth, and heat to boiling. In a cup or small shaker, mix the corn starch with 3 Tb cold water, and slowly add to the sauce, stirring continuously. Reduce heat and allow to simmer, about 5 minutes, until the broth thickens. Add this to the pork and potatoes, and stir.
