Ingredients

    1.5 cups whole wheat flour
    1 tsp salt
    1 tsp baking powder
    2.25 cups sugar (I used a blend of raw sugar and granulated)
    1.25 cups cocoa
    2 tsp. instant coffee powder
    1.5 cups chopped pecans
    1 15oz. can black beans
    1 tsp vanilla
    1 cup water

Tips

Swap nuts for hazelnuts or walnuts for a change in flavour. Double up the coffee powder if you want more of a mocha brownie.


Directions

Pre-heat oven to 350 degrees.
Mix together the dry ingredients: flour, salt, baking powder, sugar, the instant coffee powder, and the nuts. Set aside.
Rinse the black beans really well. Fill the can (with the beans in it) with clean water. Add the beans and water to a blender and puree until smooth. Add the vanilla and remaining water. Blend.
Pour liquid into dry ingredients and mix well. It will be a fairly heavy batter. If you use cane sugar, it will also be a bit coarse. Pour into a greased 9x13 pan. Level batter out.
Bake 25-30 minutes - until the batter pulls away from the sides and is puffy in the centre. Remove from the oven and cool completely before cutting.
