Introduction

Toasty and lightly flavored with with maple syrup and coconut, this is a great way to start the day for people with gluten or grain sensitivities. I enjoy it with fresh or frozen berries and almond milk. Ingredients

    Walnuts, 2 cup, chopped
    Sunflower Seeds, without salt, 1 cup, hulled
    Pumpkin Seeds, 1 cup
    Coconut, raw, 1 cup, shredded
    Salt, 2 tsp

    Coconut Oil, 1/3 cup
    Maple Syrup, 1/2 cup

    Almonds, dry roasted, 2 cups coarse chopped
    Figs, dried, 1 cup chopped
    Raisins, 1 cup (not packed)

Directions

Combine walnuts, sunflower seeds, pumpkin seeds, coconut and salt in large bowl. Microwave coconut oil and maple syrup together in small bowl (1 minute on high), stir to blend and add to dry ingredients. Mix well and spread on large cookie sheet. Bake at 320 for 45 minutes, stirring occasionally. While mixture is baking, combine chopped almonds, figs and raisins in large metal bowl. Add hot baked mixture to almonds, figs and raisins, combine thoroughly and spread on parchment to cool. Store in airtight container.
