Ingredients

4 baby or 1 medium Eggplant
4 tbs fresh peppermint
4 tbs tzatziki sauce
1 cup grilled onions
4 Garlic and Herb Tortillas
4 tsp Mrs Dash Garlic and Herb Seasoning
1 cup crumbled feta cheese (or vegetarian equivilant)
Tips
Good with a greek salad.
Directions
Remove the top and thickly slice the eggplant from top to bottom making at least 12 long slices.
Sprinkle each slice liberally with the Mrs Dash seasoning.
Grill for 5 or 6 minutes per side or until softened and set aside.
Slice the onion into thin half moons, and grill until softened, set aside.
Lay out the tortillas and spread 1 tbs of the tzatziki sauce on each.
Lay 3 or 4 slices of the eggplant on the sauce starting 2" from the bottom and layering up to the middle.
Sprinkle 1/4 of the grilled onions over the eggplant.
Sprinkle 1/4 of the feta cheese on each wrap.
Place 1 tbs of the fresh mint on each one.
Fold in each of the two sides of the wrap and gently roll up like a burrito.
Take a piece of parchment paper the size of the original tortilla and roll the wrap tightly.
Cut in half before serving.
Serving Size: 2 wraps.
