Ingredients

    1 small onion, chopped
    10-12 oz frozen kale, thawed and drained
    6 eggs
    .75 cup unsweetened almond milk
    .5 cup flour
    1 tbsp (heaping) ground flaxseed
    .5 cup crumbled feta
    Spice and season to taste (such as salt, black pepper, cayenne pepper, thyme, etc.)

Tips

Change up the recipe with a variety of vegetables, cheeses or even meats. This is a great side dish for a potluck brunch so everyone can try a little, although they go down so easily that you may want to make extra!


Directions

Preheat oven to 350 degrees. Spray mini-muffin pans with non-stick cooking spray. Saute onion until tender. Mix with kale and set aside. In a medium bowl, combine eggs and almond milk. Add flour, flaxseed, and any spices. Stir in kale mixture. Spoon into mini-muffin pans. Garnish with a sprinkling of feta on top. Bake roughly 20 minutes or until tops are lightly golden and inserted knife comes out clean.

Serving Size: Makes roughly 40 bite-sized quiche
