Introduction

My mom's recipe. Not sure where she got it, but it's been a family favorite for almost 10 years. I lightened it up a bit by using lean ham and reduced fat cheese, and using sour cream in place of mayo. My mom's recipe. Ingredients

    1 c. dry Wild Blend Brown Rice
    1 can (10 oz.) Healthy Request Cream of Mushroom Soup
    3/4 c. fat free Sour Cream
    2 tsp. yellow mustard
    10 oz. Broccoli, chopped
    1/3 lb. lean ham, cubed
    1/2 c. reduced fat shredded cheese

Directions

Preheat oven to 350F. Spray a 2 qt. casserole dish with non-stick cooking spray and set aside.

Cook rice according to package directions (takes about 40-50 min.). Meanwhile, mix together all remaining ingredients except cheese.

Stir in cooked rice; transfer to prepared casserole dish and cover with lid or foil. Bake 45 minutes.

Remove from oven, uncover, and turn oven off. Top with cheese. Return to oven, uncovered. Leave it there for a few minutes until cheese melts.

Serving Size: Makes 4 servings
