Ingredients

2 Bonless Skinless Chicken Breasts, grilled
1 box fettuccini, whole grain recommended
2T olive oil
3 cloves garlic minced
1t crushed red pepper flakes
1 14oz. jar roasted red peppers, drained and chopped
1 14oz. can fat free evaporated milk
4oz. goat cheese
4oz. low fat cream cheese
1/2c freshly grated parmesan cheese
1/2c chopped basil
Tips
You can leave the chicken out and serve as a vegetarian meal.
Directions
Cook the pasta according to package directions. Grill the chicken. While the pasta and chicken cook, make the sauce.
For the sauce: heat the olive oil over medium heat add the garlic and crushed red pepper flakes and cook until the garlic is tender. Add the roasted red peppers, milk and cheeses stirring occasionally. When the cheeses are melted use a hand blender, blender or food processor and blend the sauce until smooth. Add the basil, chicken and toss then top the pasta and enjoy.
Serving Size: Makes about 7 one cup servings
