Ingredients

3 cups white rice, cooked (leftover rice works well)
6 oz John Soules Beef Fajita Strips
2 eggs
1 cup frozen mixed vegetables (peas, carrots, beans & corn)
1/4 tsp ground ginger
1/8 tsp curry powder
1/8 tsp garlic powder
2 Tbsp extra light olive oil
2tsp sesame oil
4 Tbsp Kikkoman Lite Soy Sauce
Directions
Break eggs into hot skillet or wok & stir quickly to scramble.
Add beef strips & cook for 3-4 minutes.
Add frozen mixed vegetables, ginger, curry powder & garlic powder, stir well & allow to cook until vegetables are no longer frozen.
Add rice, olive oil & sesame oil, stir fry for 3-4 minutes until rice is heated through.
Add Soy Sauce, stir fry for another minute or two to mix flavor throughout rice mixture.
Serving Size: makes 4 servings
