Ingredients

    Quorn Chik’n Cutlets, 3 shredded or cut into chunks
    Black Beans, 1 cup (made from dried w/ no salt)
    Small Red Beans, 1 cup (made from dried w/ no salt)
    Vegetable Broth, 1 cup
    Pace Picante Sauce (Mild, Medium, and Hot), 1 cup
    Red Gold Petite Diced Tomatoes & Green Chilies (Hot), 1 cup
    Brown rice (.5 cup uncooked), 1 serving
    Yellow and/or White Sweet Corn, Frozen, 1 cup
    Red Onion, raw, .5 cup
    Lime Juice, .25 lime yields
    Bell pepper - red, 0.25 cup
    Bell pepper - green, 0.25 cup
    Garlic, minced, 3 cloves
    Cumin, Mrs. Dash Garlic & Herb, Black Pepper, Oregano, Thyme, Chili Powder, smoked paprika and powdered chipotle to taste.

Tips

Add small splash/es for vegetable broth if need more moisture.

Top with cheese, sour cream, greek yogurt... (not included in nutrition)


Directions

I large crock pot, place all ingredients in order of dry first, wet last. Add Cumin, Mrs. Dash Garlic & Herb, Black Pepper, Oregano, Thyme, Chili Powder, smoked paprika and powdered chipotle to taste.

Cover and cook on low for 6-8 hours or high for 2-4 hours.

Serving Size: Makes 8 1-cup servings.
