Introduction

Number of Servings: 8

Ingredients

    1/2 c rice (uncooked)
    3 c water
    3/4 c coconut milk
    1/2 c sugar
    pinch of salt
    1 ear of corn (~1/2 c kernels)

Directions

Simmer rice in water for 15 minutes. Add coconut milk, sugar, corn & salt, cook 3 minutes, stirring to dissolve sugar.

Serving Size: makes 8 1/2-c servings
