Ingredients


    Ingredients:
    Chia Seed 1 tbsp
    Whole Peeled Hard Boiled Eggs 2
    Cheese, Parmesan, Shaved or Shredded 1 tbsp
    Pepper, red or cayenne, 2 tsp
    Baby Arugula Salad 1 cup
    Olive Oil, 1 1tsp
    Brie Cheese, .1 cup, sliced
    Grey Poupon Dijon Mustard, 3 tsp

Tips

If you want your sandwiches a little more moist, instead of hard boiling the eggs, you can make them soft boiled. Also, you can adjust the recipe so that it is less spicy.


Directions

Mash the eggs and brie in a non-stick bowl and stir in the chia seeds, cayenne, and mustard. Coat the bread with olive oil and toast or grill them until they're goldeny brown, or until however you like your toast. Cut them in half, formin four sections of toast. Top them each with the mixture from the bowl and with a generous heap of arugula, followed with parmesan on top. Serve while it's still warm.
