Ingredients

2 Cups Rolled Oats
1 Cup of Rice Flour or Coconut Flour
1 Cup Shredded Coconut, unsweetened
3/4 Cup or 12 tbsp of Semi Sweet Chocolate Chips
1/2 Cup Chopped Walnuts
1/2 Cup Chopped Pecans
2 tsps Cinnamon ground
2 tsps Baking Powder
1 tsps Salt, optional if using salted butter
1 Cup Coconut Milk
4 Whole Eggs
2 tsps Vanilla extract
1 stick or 1/2 cup melted butter
1/4 cup brown sugar
Tips
If you can't find Rice Flour or Coconut Flour, just use 3 cups of Rolled old fashioned oats. You can use any other milk, if you do not like the coconut milk.
Directions
Preheat oven to 350 degrees
Mix dry ingredients into large mixing bowl.
In a separate bowl, combine milk, eggs, vanilla, melted butter and brown sugar. Mix well with whisk.
Combine wet ingredients into dry bowl and mix well with spatula.
Pour into 9 x 13 glass baking dish and spread evenly.
Bake at 350 degrees for 35 - 40 minutes. When golden brown and toothpick comes out clean, remove from oven.
Let cool 2 hours before cutting into 24 bars.
Store in refrigerator and wrap some for snacks.
