Ingredients

2 lbs pork tenderloin
1 cup honey
1 cup chicken stock
.5 cup Dijon mustard
.25 cup olive oil
juice from one lemon (3 tbs bottled lemon juice)
.5 tbs salt
.5 tbs pepper
.25 tbs oregano
.25 garlic powder
1 medium onion, chopped finely
Directions
Mix the dry spices - the salt, pepper, oregano and garlic powder - together in a bowl. Rub the tenderloin all over with the spice mixture, then place the pork in the slow cooker.
Pour the cup of chicken stock over the meat. In a small bowl, mix together the lemon juice, olive oil, mustard and honey, and pour over the pork tenderloin, making sure to cover all portions of the pork. Sprinkle the chopped onion around the slow cooker.
Turn the slow cooker on to low and cook the pork for approximately four and a half hours or until the internal temperature of the pork registers 160 F. Always make certain your pork is cooked through, as eating raw pork can make you ill.
Remove pork from the heat and let it rest on a service dish. After it as cooled for a few moments, you can cut and serve.
