Introduction

Ingredients

    2 cups oatmeal, ground in blender
    2 cups chopped dates
    2 cups whole wheat pastry flour
    1 tsp. cinnamon
    1 tsp. cloves
    1 tsp. nutmeg
    1 tsp. ginger
    1 tsp. baking soda
    2 tsp. baking powder
    1 tsp salt
    2 cups date sugar
    1/2 cup milk
    (1) 29 oz can pumpkin
    1/2 cup olive oil
    3 eggs
    1 cup raisins

    Chop dates into small pieces. Combine with oatmeal in blender, and grind in blender until well-blended. Place in mixing bowl. Add remaining dry ingredients (whole wheat pastry flour, cinnamon, cloves,nutmeg, ginger, baking soda, baking powder, and salt.)

    In a separate bowl mix together eggs, pumpkin, olive oil, milk, and date sugar.

    Combine wet and dry ingredients. Fold in raisins. Spoon batter into greased muffin tins. Bake for 25 to 30 minutes.

Directions

Preheat oven to 425 F. Then turn down oven to 350 F for 25 to 30 minutes.
