Ingredients

3/4 cup part skim ricotta cheese
1/2 cup (4 ounces) 1/3 less fat cream cheese
2/3 cup 2% Mozzarella cheese
2 garlic cloves
1/8 cup green onion minced
1/8 cup white onion minced
salt, pepper, oregano, parsley to taste

Directions
Rough chop the onions, scallions and garlic.
Having a "hand crank" food processor really helps. They are like 10 bucks. I tossed the Onions and garlic in my hand crank food processor and got everything minced really small, then added the ricotta and cream cheeses and went at it again. Once it was loosened up, I switched to the mixing attachment and added the spices/mixed/tasted until I liked the way it tasted. Watch the salt, as the cheese is salty to begin with. The taste was smooth with a slight bite. I then added the mozzarella and stirred it by hand (the cheese was a bit runny and the mozzarella helped to thicken the mixture a bit). Enjoy on a cracker or stuff into jalapeno peppers for grilling.
Serving Size: Makes a total of 1 2/3 cup, about 26 1-tablespoon servings
