Introduction

Excellent as a lunch with grilled chicken or remove the grilled chicken and use as a side dish for a summer barbeque. Ingredients

    18 oz grilled chicken breast, no skin
    1/2 cup of dry quinoa
    2/3 cup of dried cranberries
    handful of fresh cilantro, coarsely chopped (about 3 TBS)
    1 TBS Extra Virgin Olive Oil
    1 TBS white vinegar
    1TBS honey
    1/4 cup orange juice
    1 tsp sea salt
    1 tsp ground cardamom
    1/3 cup chopped pecans

Directions

1. clean chicken breasts of visible fat and sprinkle with salt & pepper, grill on a hot grill for about 5 minutes per side. Once cooled, chop chicken into approx 1 inch cubes and set aside.

2. prepare 1/2 cup of quinoa as directed on package.

3. mix all other ingredients into fully cooked quinoa including the grilled chicken.

4. Separate into six servings and serve hot or chilled.

Serving Size: makes 6 servings, about 1/2 cup each as prepared
