Ingredients

Salad:
2 cups chopped romaine lettuce
1 cup chopped grape tomatoes
1/2 cup fresh or frozen corn kernels
1/4 cup chopped spring onion
1/4 cup chopped cilantro
1 1/2 cup pinto beans
Garnish:
1/3 cup crushed tortilla chips
Dressing:
1 ripe avocado, mashed
3/4 cup salsa (not chunky)
1/2 cup sour cream (we use Tofutti)
3 Tbsp. lime juice

Directions
