Introduction

A tasty spin on "crab" cakes... A tasty spin on "crab" cakes...
Number of Servings: 15

Ingredients

    5 red potatoes, skinned
    2 lbs. cod, cut into strips
    1 onion quartered
    6 cloves of garlic smashed
    2 Tbsp. butter
    3 Tbsp. Old Bay Seasoning
    2 Tbsp. Parsley
    Red pepper flakes (to taste)
    Salt (to taste)
    Pepper (to taste)
    Panko bread cubs

Tips

If you skip the chill time the patties will not hold together.


Directions

1. Boil potatoes, cod, onion and garlic till done
2. Place in Kitchenaid mixing bowl with flat beater until combined.
3. Add butter and seasonings, continue to mix
4. Chill for at least an hour
5. Using an ice cream scoop, makes patties (2 scoops each) and pre-heat oven to 400
6. Pat Panko cumbs on both sides
7. Placed on cookie sheet sprayed with Pam
8. Spray tops of patties with Pam
9. Place in oven for 15 minutes
10. Flip and bake another 15 minutes
