Introduction

I make this for lunch when I have left over cooked chicken breast to use and need lunch in a hurry. I make this for lunch when I have left over cooked chicken breast to use and need lunch in a hurry.

Ingredients

    4 chicken breast halves, skin and bone removed, cooked and sliced
    4 large pita
    1 cup chopped white onion
    1 cup sliced dill pickles

    Garlic Mayo

    4 cloves garlic
    1 cup Hellmans Light Mayo
    1 Tbsp olive oil

Tips

Need to make enough to share with entire family; that way they might not notice how garlicy your breath smells.


Directions

Combine garlic, mayo and olive oil in food processor until pureed.
Split each pita in half and spread bottom half generously with garlic mayo. Layer chicken, pickles and onion into center of pita and replace top half of pita. Roll pita up around filling and grill in sandwich press until golden brown. If you don't have a sandwich press, use a frying pan on medium-high heat and place some weight on pitas (another heavy pot works). Flip pitas if using frying pan and grill both sides until golden brown..
