Ingredients

    1 package smoked sausage of choice; could use turkey for less calories, fat, etc.
    1/2 to 1 onion depending on your taste, diced
    1 red bell pepper, diced
    1 orange bell pepper, diced
    6 red potatoes, washed and cubed
    2-3 TBSP veggie, canola, or olive oil

    spices of choice:
    black pepper
    garlic salt
    italian seasoning

Directions

after chopping everything up, put about a tablespoon of oil in a 9x13 dish, add sausage, peppers, potatoes and onions, mix well. top with spices and another tablespoon of oil. mix again. cook for 20 minutes, stir, then cover with foil for another 20-30 minutes, until the potatoes are tender.
