Ingredients
-
1 can low sodium white beans, drained and rinsed
1 cup fresh or frozen blueberries
1 serving dried, mixed berries (about 40 grams)
6 dates (1 serving)
1 Tablespoon jarrow Pomegranate Juice 4X concentrate
3 Tablespoons dry cocoa powder
1/4 teaspoon pure vanilla extract
Tips
To make the romaine "boats" as in the picture, spread a spoonful of dip on the leaf and top with sliced fruit like tart, crisp apple, strawberries, cherries, or bananas. Nice touch with a little sliced almond sprinkled on top. The dip is good as a spread on bread also. Don't limit the dippers to fruits. You'd be surprised how well it goes with zucchini, carrot, celery and even cucumber.
Directions
Place all ingredients in a food processor and pulse.
Portion control: 3 servings, a generous 2/3 c. each. A serving is enough to spread almost a whole head of romaine.
