Introduction

A simply delicious sauce over oven cooked trout and sauted vegetables! Can substitute equal amounts of favorite veggies and it will still be delicious! Ingredients

    4 Rainbow Trout Fillets
    2 T. Smart Balance (or butter)
    1 bell pepper, julienned (or 1.5 cups of your favorite vegetables that soften when you saute them.)
    2-3 cloves garlic, finely chopped
    1/2 med. onion, cut into strips
    6 T. dry vermouth or white wine
    2 T. Tomato paste or Ketchup
    2 T. fresh parsley, chopped (or favorite herb)
    Salt and pepper

Directions

- Preheat oven to 300 degrees
- Combine the butter, bell pepper, onion and garlic in a pan and saute well, about 5 mins. or until everything has softened and browned. Stir in wine, tomato paste, and parsley (or herb). Season with salt and pepper. Pour into baking dish.
- Place trout fillets (meat side down) on vegetable mixture in baking dish. Cover and bake for about 20 mins. or until flaky.

Serve with rice or pasta or bread, whatever you prefer to absorb the a-maz-ing sauce and enjoy!
