I came up with this simple throw together as something to bring to a hot cookout. It's very refreshing, filling, and allows you to eat quite a large volume for the calories I came up with this simple throw together as something to bring to a hot cookout. Number of Servings: 6

Ingredients

    2 english cucumbers, seeded and cidec
    4 roma tomatoes, diced
    1 cup brown rice, dry
    2 T olive oil
    juice of 1 lemon
    1/4 cup loose packed fresh parsley
    1/4 cup loose packed fresh mint
    salt and pepper to taste

Directions

Cook rice to package directions, set aside

While rice is cooking, dice cucumbers and tomatoes. you may want to put them in a salad spinner to drain some water but it's not required

Now add rice, oil, lemon juice, herbs and spices all to one big bowl and mix well. Adjust any spices or add ins to your liking

refrigerate to cool and let flavors combine for at least 1 hour.



Serving Size: Makes 6 1 cup servings
