Ingredients

    Pancakes:

    1/2 Cup Almond flour
    1/2 Cup Garbanzo Bean flour
    2 eggs
    1/2 Cup Unsweetened vanilla almond milk
    1 tsp. cinnamon
    2 tsp. baking powder
    2 Tbs. vanilla extract
    2 Tbs. Xylosweet

    Yoghurt Topping:

    1/2 Cup plain, non-fat Greek Yoghurt
    1/4 Cup sugar-free preserves (I like strawberry or apricot)
    1 banana, sliced
    1/2 Cup strawberries, sliced

    Peanut butter *optional*

Tips

Makes sure you have a nice thick batter. If it's too think, the pancakes will stick to the pan and not cook properly. Enjoy!


Directions

Pancakes:
Mix ingredients until smooth. Pour half a cup of batter into pre-heated oiled non-stick frying pan. Cook on both sides on medium high heat until done.

Yoghurt Topping:
Mix until well combined. Add a sliced banana and sliced strawberries.

Serving Size: Makes approximately 4 6 inch pancakes.
