Ingredients

1/2 C. White Onions
2 Cloves Garlic
1/2 Head Cabbage, chopped
3 Stalks Celery, chopped
1 C. Carrots, chopped
1 C. V8 Juice, Low Sodium
4 C. Hot Water
1 can Cannellini beans, drained
Salt, to taste
Black Pepper, to taste
Minced Dried Onion, to taste
Tips
If you like very spicy soup, try a hotter flavor of V8, add hot sauce, chili powder, or red pepper flakes.
Directions
Saute white onion and garlic over medium heat in large pot.
Add 2 cups hot water and bring to a boil. Add vegetables slowly, adding more water as needed. Pour V8 juice over top. Stir in seasonings as desired. Bring mixture to a boil and allow veggies to cook through (approximately 20 minutes). Lower heat and simmer mixture for another 20-30 minutes adding water as needed to make more or less broth as desired. I added beans at the end so they wouldn't get too mushy.
Remove from heat and serve. Enjoy!
