Ingredients

    2 1/2 Cups Canned/Pureed Pumpkin
    4 eggs
    1 Cup Sugar
    1/2 Cup oil

    Dry Ingredients:
    1 1/2 Cups rice flour
    1/4 Cup soy flour
    1/4 Cup cornstarch
    1 tsp. salt
    1 tsp. baking soda
    2 tsp. baking powder
    2 tsp. cinnamon

Tips

Can use applesauce or any pureed fruit.


Directions

Preheat Oven to 325 degrees. Prepare muffin tins with gluten free cooking spray, or line with paper liners. Combine pumpkin, eggs, sugar and oil in a large mixing bowl. Sift dry ingredients together in a second bowl. Combine dry ingredients into pumpkin mixture, stirring until moistened.

Spoon batter into 2 muffin pans.

Bake 18 to 24 minutes.
