Ingredients

    4 cups rolled oats
    1/2 cup Splenda (sucralose) sweetener
    2 teaspoons baking powder
    2 teaspoons ground cinnamon
    2 cups 1% milk
    5 medium bananas, mashed
    4 Tablespoons olive oil
    2 large eggs
    2 teaspoons vanilla
    Add:
    1-1/2 cups frozen unsweetened blueberries, thawed & drained
    1 cup chopped pecans

Tips

You can vary or add more additions (chopped apple, raisins, mini chips, etc.) or leave the additions out if desired, but remember to adjust your nutrition tracker totals. Store in a freezer bag in freezer (2 mos) or storage bag in the refrigerator (1 wk). Microwave 30 secs for serving a thawed portion.


Directions

Preheat oven to 350º. Lightly coat muffin cups in standard-size tins with cooking spray (or use paper liners). In a large bowl, stir together the oats, sugar, baking powder and cinnamon until well combined. In a separate bowl, combine the milk, bananas, oil, egg and vanilla until well blended. Add the milk mixture to the oat mixture and stir well. Divide the mixture evenly among cups, which should fill to the top. Bake on center rack until toothpick in center tests clean, about 25 minutes.

Serving Size: Makes 22 portions, 1/3 cup each
