Ingredients

    Mix all the ingredients together - I find an old olive oil bottle is great for this as you can really shake it up

    Change the proportions of the ingredients and/or add a pinch or two of herbs to find what you like best

    It keeps well in the fridge (I have used it after a couple of weeks and found it fine, but don't quote me on that!)

    Take it out of the fridge 15 minutes or so before use as it goes a bit solid when cold

Tips

The yellow mustard I use is Colman's English as it adds a nice piquancy to it, but milder ones work well too

Any light vinegar is fine, not just cider - I just add a dash of light vinegar to tone down the balsamic a little

You can reduce the calories by using a lighter oil, but I like the flavour of extra virgin olive oil, plus it livens up a plate of almost zero calorie salad pretty well, so it's not too bad!
