Ingredients

    2 Large Beets (cooked and pickled)
    1 Orange
    1 Avocado
    1 C Dry Ancient Harvest Inca Red Quinoa
    2 tbsp. balsamic vinegar (if desired)

Directions

Cook quinoa. Chop beets, orange and avocado.
Add to quinoa and sprinkle balsamic vinegar (to taste).

Serve immediately as a warm salad or chill over night and serve cold...
