Introduction

I found a really low-calorie recipe for Chicken Kiev here (thanks to BUSSMOM for that), and managed to turn it into a Chicken Cordon Bleu recipe and still shave off calories by making very judicious ingredient choices. Ingredients

    4 Tbsp - I Can't Believe It's Not Butter LIGHT
    1-1/3 Tbsp - chopped chives
    1/4 tsp - garlic powder
    8 skinless, boneless chicken breast halves (approx. 3-1/2 - 4 lbs)
    2-2/3 cups - Kashi "Simply Maize" cereal, crushed (about 1-1/3 cup after crushing)
    2-2/3 Tbsp - chopped parsley
    1/3 cup - Silk unsweetened almond milk, vanilla flavor
    8 slices - Oscar Mayer "Deli Fresh" smoked ham
    4 slices - Kraft "Deli Fresh" extra thin swiss slices

Directions

Mix light spread, chives, and garlic powder. On a smooth surface plate, shape mixture into a rectangle of approx. 4" x 2-1/3". Cover and freeze for about 30 minutes or until firm.

Crush cereal as finely as possible. Mix with parsley. Set mixture aside.

Trim fat from chicken. Flatten each chicken breast to about 1/4" thickness by placing between sheets of wax paper or plastic wrap and pounding. Cut flattened breasts in half (4 breasts; 8 halves total).

Heat oven to 425°. Spray 11" x 17" baking sheet with nonstick cooking spray.

Remove spread/chives/garlic mixture from freezer and cut into eight equally-sized rectangles.

Lay flattened chicken breast halves on baking sheet. Place one thin ham slice on top of each breast. Top each piece of ham with one of the spread mixture rectangles. Finish layers by placing one-half slice of swiss cheese on top.

Roll each chicken breast to wrap the ham, mixture, and cheese inside. Then dip each piece in the almond milk. Roll dampened chicken in the cereal mixture, coat evenly, and replace on baking sheet seam-side down. Use any remaining cereal mixture to sprinkle over uncoated spots on the top and sides of the chicken.

Bake uncovered for about 35 minutes, or until the chicken is no longer pink in the center.
