Introduction

Ingredients

    1c ground almonds
    ¼ c coconut flour
    ⅓ c flaxseed meal
    1c mixed seeds (e.g. sesame/sunflour/flax)
    ½ c chia seeds
    ½ tsp salt
    1 tsp baking powder
    4 eggs
    1 tsp apple cider vinegar
    ½ c thick greek joghurt (or cottage cheese)

Tips

3-6 tbsp of melted butter or coconut oil can be added for a softer crumb.


Directions

Mix dry ingredients, whisk egg, vinegar, and greek joghurt together. Mix with dry ingredients. Place in a small buttered loaf tin, sprinkle flaxseeds on top and let stand for few minutes. Bake at 180°C for about 25min.

Serving Size: Makes 1 small loaf of approx. 16 slices
