Ingredients

    Eggs, 3 whole and 2 egg whites (straight from our backyard chickens)
    1/4 Cup non fat millk to mix up the scrambled eggs
    1 T Olive oil
    3/4 Cup mushroom sliced
    2 oz of frozen spinach thawed
    2 oz crumbled feta cheese

Tips

I prefer to dice the mushrooms so they aren't so chunky in the eggs.


Directions

Whisk eggs and milk in a bowl. Meanwhile, heat olive oil over medium heat in skillet with mushrooms and spinach. When mushrooms brown and soften add whisked eggs and cook until set. Stir occasionally when the eggs start to firm to keep from burning. Split into 2 servings and sprinkle feta cheese on top.
